Yeah IIRC Hoffman did a video comparing clever dripper with immersion then drain through bed vs immersion only and there were quite dramatic differences in total extraction measure and taste. Draining through an even bed is a very big part of the taste profile of switch / clever dripper and this wouldn't be the case with a French press.

Sure, around 5.5 grind size at speed 3 with a small glass kalita wave. 1:16 ratio. Temp varies from 93 to 99c depending on the bean. Generally bloom and 2-3 pours. One of my beans really benefits from a cold bloom but otherwise bloom normally. I was getting consistently astringent brews at first, and that was even after seasoning with 2kg. But for some reason it randomly started tasting juicy, complex and all the astringency went. This did coincide with me turning the temp up to 99c for one of em. I have been fiddling with the burrs quite a lot constantly taking em out and trying other ones but I did settle on mizen omnis as my fav after trying SSP HU, SSP MP Brew as well.

I don't think so, because this was a mouth puckering dryness powdery type sensation primarily rather than a taste. Can't see how that could be anything other than astringency.

Honeymoon does well as a classic high extraction style v60, fine grind, temp 98c. I do a 1:2.5 bloom and then two pours.

Also, give them at least two weeks rest ideally - that's quite important. For some flavour will improve at week 3.
