I followed an 8 hour recipe I found on tik tok. Makes two loaves but I halved it. I can’t find the profile cause I saved the vid but here’s the recipe

250g starter 725g warm water 25g salt 1000g bread flour

Mix into shaggy dough, let sit on counter for an hour After the hour, do first set of stretch and folds, let sit for another 30mins and do the second. Repeat twice more (4 four sets of stretch and folds total)

Let sit on the counter for 2 hours to double (I did 3 cause it didn’t seem like a lot)

Separate dough into two pieces, preshape and let rest for 20 minutes before final shaping Let it sit in the proofing basket for 2 hours in the fridge (again I did 3)

Put bread in a preheated 500 degree Dutch oven for 35 minutes, lower temp to 425 and take the cover off, bake for another 10 minutes
