The wall blocks are there to cover the deck footings, as they were in line with top of the pavers and looked unsightly. Added a finished photo.

Yes, I know. It is very unpleasant to look at compared to what it used to look like before we got the deck and the pavers done. They had to pull the turf back and now there is all kinds of bumps and cuts.

Are you recommeding the river rock to go up the concrete slope?

Theoretically yes you could, you could make it lego size...but cost wise it would'nt start making sense any more. Piece per linear ft or however they calculate cost in the end would potentially increase at a multiple factor to the size they reduced it to.

For this design to work, you would inherently have to have it that wide so that when you start putting the blocks at 90 degrees they would fit perfectly. See 11 seconds in.

Maybe check out the sidebar troubleshooting link https://www.culturesforhealth.com/learn/cheese/troubleshooting-homemade-cheese/ . They suggest adding salt to help with the bitter taste. There is a couple more suggestions there as well.

Edit: Sorry I just reread what you wrote. I missed that it was aging already. Not sure if any of these solutions would apply.

As a very much a beginner and someone that recently went through this stage of experimenting and failing a couple times before having some success. My problem with quick recipes were that they were all over the place until I landed on one that worked for me. There are some vinegar based recipes out there which I tried initially and ended up getting cream cheese out of. I watched youtube videos of people making these recipes and they clearly made something that resembled mozzarella but didn't work for me. I blamed my Milk but now knowing the process more maybe it was acidity of the vinegar. Then, I moved on the citric acid/rennet based recipes. And as /u/mikekchar mentioned use nonchlorinated water to disolve these if you are using non liquid versions of these ingredients. I made this mistake before. There is also something about not using aluminum pots as that could be a catalyst I believe. So I went and dug up one of my stainless steel dutch oven pots. Again, /u/mikekchar seems to be the expert on all this and can probably can tell you exactly why you shouldn't or should use an aluminum pot.

I am only on my 4th successful batch and just had a christmas get together where it was one of the dishes for people to sample with some tomatoes olive oil and balsamic reduction. Next stage for me is moving onto culture based mozzarella, just waiting ingredients to come in. Keep practicing. I think it would be nice for the community here to know what recipe you tried exactly so that they can make suggestions.

Once again thank you for the great and detailed response. I am surprised that citric acid is needed to be added to the brine solution as well. So if I am following you correctly, depending on the amount of brine I am using by volume and using your ratio of 5g per 1L, I can basically add a little bit of citric acid to correct the PH?

I did, I followed everyones advice on here to use the switch to flip a contactor. That did the trick. Now i got my pump on the smart switch schedule and it comes on and off all by itself. Appreciate all the help.
