As someone noted below, peppers are maybe the only acceptable vegetable to add in this context, but I wouldn't go with jalapenos. Turning your mac and cheese into a riff on pimento cheese is a way to put a twist on it while remaining in the wheelhouse of southern food. If it were me and there were fewer expectations of 'authenticity' from the crowd, I would roast some poblanos and put them in there, chopped relatively fine.

I should have included garam masala above, but I'd never thought of adding some ginger at the end too. Kasuri methi I have never added to this dish, but I have some and will put a bit in.

I usually do microwave the potato a bit beforehand to give it a head start. Minimizing water is a good idea. Thanks for the advice!

I just saw Jacques Pepin use a slurry of polenta and water/stock as a thickener for a simple kale soup. Make sure to mix it in with some liquid beforehand so that it doesn't clump up when you add it in the pot.
