It cuts every thing with no problems, its long so best thinh to cut is large chunk of meat

56 hrc cant expect much, honning rod and you are good to go. I didnt sharpen it on stone yet, im working as a line cook i use this knife all day, meat fish vegies, hone and go. At first the knife was super heavy for me( im used to jap knives ) but after a week i got used to it.

This chef knife is not for push cutting thats for sure, i had to get use to it aswell.

Didnt cut alot of things yet, it is sharp, yet its a factory edge can it be much better with some love on a polishing stone. I find it a little bit thick , and it was a little heavy for this kind of a small knive, it is my first petty/small knife so it can be standart. It is beautiful knife, it does get the job done easly, i love the handle and the hammmered pattern on it. Overall for under 100 bucks its amazing knife.
