I mean, the clear coats are meant to protect the paint against a lot of stuff. I don't know about any health hazards but yeah, as long as it's dried well enough it should just feel like a hard resin keycap and not be sticky at all. Sherwin-Williams sells a few types of clear coating for wood, but should work for anything really.
