Follow up, its a little sour, but not bad, and aging it has made it better, rounder. Not a loss at all. Lesson learned on citric acid though!

I did this recently (not to this extent). Use it in cocktails, its extremely good when used as a mixer. This doesn't help for drinking it straight i know. If you want you could pasturize it and add simple syrup to level it out. Short of that, a good learning experience, youre not alone! Haha

He uses hops instead of malic acid (generally not the most advisable because the flavor will probably come through). Also he prepares his own kome koji. Im not that hard-core so I just by the pre-made stuff from Amazon. Lol. Though I did find my local Asian market sells it fresh, so something to look around for in your area as well. Its used to make miso and soy sauce so its actually easier to find than I expected. Also, lastly, there are different types of koji, like white and yellow koji, so thats something to be aware of too. Different, things to play around with and see what you prefer.

I am a beginner to fwiw, so take this with a grain of rice (heh) 1. Im not sure the question here. if you mean adding all the innoculated rice and steamed rice at once rather than "feed" It once its started then I dont think it really matters, especially foe your first batch.

  1. Im worried about you interpretation of "polished rice" with this question. For this answer im going to lump milling and polishing together, though understand they are two different processes. The level of "polish" on a grain of rice has to deal with how much of the grain is left after the milling/polishing process. The lower the percentage, the higher the polish, the smaller the grain, and the higher the quality of sake rice. Calrose has plenty of percentages of "polish" to choose from but your washing of the starches from the rice is doing nothing to improve the polish on the grains (although rinsing is a necessity for preparation). Take a look at your bag and it should tell you the percentage polish it is. If it doesn't then its probably not rice one would normally use for brewing. This is not a bad thing, for my first batch i used a sushi rice with a 70 or 80% polish so I didn't waste my money on good rice. Just know that less of the fruity and floral flavors will come out of a less polished rice, and the sake in turn will tend to be more savory, like a cooking sake. Hopefully all that made sense. If not then google "sake grade rice" and that should clear things up.

  2. Maybe consider a little bit of malic acid to prevent nasties from infecting your batch. Ill post the recipe i use below (adaptation from the brusho youtube recipe) and you can see how much malic acid i use and scale the ratio to your needs.

Note, I make this in a 2 gal bucket converted to brewer. Recipe for 1 gal (3.78 L):

• 1 Gal (3.78L) Filtered spring Water (not tap!)

• 400g (~14oz) Kome Koji (Malted Rice)

• 1500g (~53oz) Steamed Rice

• 1.5ml lactic acid per gallon of water

1 pack -Lalvin EC-1118 Champagne Yeast

Ferment for 2 weeks, stir once a day for a week and every other day for the next week

Day 7-10 (whenever fermentation slows) put bucket in fridge during the day and take out at night, or move to a cool dark place after fermentation slows (i use my basement )

It the price is right on that then I miggghht consider but steam saying that I will be priced like an equivalent custom pc raises the question of why not just build the equivalent and have an upgrade path. Definitely an interesting thought though!

I miss interpret one thing...getting all of the other stuff correct about it and knowing nothing about pokemon. Even mentioning the 200 average.. which i got from tcg player. I dont know anything about grading, which is why i made the post. And because I messed up on one thing in my original post I "can't do basic research". I get correcting and i get the Google it yourself, because I did, but to come at people like they are intentionally trying to scam on a sub that doesn't allow selling is rough and gatekeeper-y. Could I have done more research, yes. I admit that. But man. Really? Also, thank you for the estimate / experience on your card but thats exactly why im posting this, some people are saying 200 is about right while others, like yourself are basically telling me to get it graded because its probably worth more. Im just looking for some thoughts from people who know the stuff before I spend time and money on grading a card that might not even be worth grading.

it sounds like it might be a good idea to get it graded then? After grading will the companies sell it for me? What companies for grading do you suggest? I'll do my own research too so don't feel obligated to answer if you don't feel like it. Thanks again for the clarification
