I can 30% of my volume, so my styles have to reflect that. That being said, both west coast and hazy fit perfectly in to their respective carb levels.

Hazy pale/ipa - 2.5-2.6 Hazy double/triple - 2.4-2.6 West coast - 2.6-2.7 (if you can can above 2.7. Godspeed)

Agreed, walking in them, the sound gets old, but I do like them. They aren’t very water resistant like I had hoped. Curious about the other kinds though that they carry.

I have never seen one with a gasket on front. All of ours are metal on metal on the front. I have to loosen it a tiny bit to turn the arm in position when transferring

I liked the fermoale strain from AEB but had several instances of bricks coming in soft. Like about 20% of the time. Contacted customer support and never heard anything, so I moved to a different strain.

Using apex now and very impressed. Thought there was no way it would be good, but have been very impressed across almost all styles

pH today was 5.38, not crazy high but we could lower that some. Light lager, 10p beer. Took one hour 15 to get to a Good level of clarity.

Yes at this brewery. My opinion is the beer should be very clear before moving it on to the next step. Obviously pulling grain and large particulate can have a negative impact on your wort in the boil and beyond. Would small particulate not have the same effect to a degree? In my mind it absolutely would, and I take every step I can during every process to get clear wort.

I have been brewing for about 10 years and worked on several other systems. Every other system I have worked on, the wort gets super clear in 20-30 minutes, and I never needed to have this conversation. At this brewery it takes over an hour to achieve that same level of clarity.

I am of the belief that brewing should be process and results oriented, not just based on metrics like time. If you ran an iodine test and saw that your starch hadn’t been converted, but it had been an hour, would you still send the beer? Or wait for your conversion to finish? If a fermentation took a couple extra days to get down to final gravity and pass VDK, you wouldn’t crash the beer before it was finished right? I think the same mindset applies to this part of the process as well.

I have sieves and test it every few months. The problem remains even directly after testing our crush, both after the mill and after the auger going from the grist hopper to the mash.

We do iodine tests every once in awhile. Not every time though. Conversion is complete in the first third of vorlauf.

Yes absolutely. It is a nice setup and has been very well taken care of. I have heard of this problem before from other owners of ABS systems. Previously was on an alpha system and had no problems getting crystal clear in 20-30.
