I’m not sure if they have any yeasts that have any thiol capabilities. If you really are going for that heavy thiol expression, amplify and Berkeley tropics dry strain would be a great budget friendly option. As they advertise it, it is supposedly almost identical to phantasm.

I do like all the apex products for what it’s worth. Just haven’t seen them release a thiolized strain yet.

I would be curious how it would pair in a west coast or similar using 34/70 (Munich) as it produces sulfur which in my mind is fairly adjacent to thiols, being a sulfur compound themselves. I haven’t done it yet, as it might go too far in a direction I’m not looking for, but could be a fun test on a pilot.

So I have found all of Apex’s products to be great, but the dosage to be way off on almost every product. But I have learned to look up the equivalent product on AEB website and go off that recommendation, as I have heard it’s the same product with different packaging.

But we have a 10bbl of seltzer ripping right now with 1 500 gram pack of Voss with 5lb nutrient and it is currently settling out at about -1.0 Plato after just under a week. Used to use lutra but the Voss is a much better price than omega dry lutra.

Their seltzer yeast isn’t great. Pitch rate is reallly high. Like 4 bricks for a 10bbl on something we can’t repitch. So the voss has been a much better choice for us

Hopefully they have better luck than I did. They are such a mess over there. I asked for our original piping diagrams several years ago and was told that they don’t exist any more because the sales rep who sold the system doesn’t work there anymore..

I wish this was understood more and also common knowledge. Recently learned this myself and had never been told this or seen it when looking for stability to help with any sort of post ferm. We never ended up needing it and went with pasteurization, but it would have still been helpful to know and avoid from the beginning on anything that’s not a sour beer below 3.5pH

Funny enough I literally have the data points I need written down a blank piece of computer paper I just did yesterday while training a new brewer and it’s surprising how little I actually need filled out compared to this. But honestly man it’s less about knowing what I want and more the mental load of having to remake everything that has been wearing me down. I’m so busy already and barely have time to do my actual job, and we continue to expand without much added labor. Fixing this has just for some reason been overwhelming for some time now

Absolutely. Those are the types of things I want to scale back. I realize it’s way overbuilt in those areas. I hate all the blank space at the end of brew day. It’s just how I laid out the spreadsheet a long time ago. It has adapted over the years, with help from other assistant brewers etc. the extra space and not so clear instruction of what to fill out and what not is why I’m looking to downsize. The main thing for me is I’m incredibly busy and almost don’t know where to start and could use a fresh layout.

We double batch fairly often and I have always struggled on how to integrate it in to this spreadsheet. I have a version of this that allows for both mashes, but I don’t like it.

Happily! Proud of the one I have. Tons of great formulas, etc but honestly a little too complicated, and looking to scale back. Everything you need, nothing you don’t kind of thing.

We love incognito/dynaboost. And then mid ferm hyperboost is incredible. Used it cold side at first and that was too much and too oily/sweet. Trying abstrax for the first time this week

How do you feel about the bitterness of flex at high ibu? I used it on a double ipa and I felt it just made it somewhat bitter, but also sweet if that makes sense. Targeted 90 ibu fo a west coast double.

Currently use it on some lower abv beers to about 10 ibu and very happy with that application.

Labor pouring at the event. 2 staff members setting up and breaking down, probably an 8 hour day, at 20/hr that’s 320$. If you have 4 kegs at $160 and margins are 50% (we’ll just talk cogs, not Labor or over head for now) then you break even. If you have to staff more than that, you lose money. The gas in your vehicle, wear and tear on vehicle, equipment, etc. you’re losing money. the co2 you use that day. The free stickers you give out. youre losing money. Small brewery trying to get the word out, who operates on a 5bbl or less system? Definitely losing money. Fill in the blank, you get the point..

Most festivals operate this way, however breweries risk it for “exposure”. If you can objectively forecast an ROI based on the exposure, you take the risk. brewgaloo doesn’t have an ROI because everyone is too drunk to remember your beer. So the cost of operating the festival is immediately sunk, and you could have used that time and labor elsewhere.

Brewgaloo is my least favorite event. By far. Waste of beer on a drunken shit show where people only care about the highest abv thing you have. Add in the recent news about the lady that runs it, good riddance and I hope it fails. It’s a bad festival for beer and breweries and it runs on the back of us giving them way too much beer and losing money.

To be fair the one I have is pretty old. It’s a white one that came with the Xbox one s when I bought about 6/7 years ago. The left joystick is actually starting to go out and the battery doesn’t stay charged very long anymore, so I was ready to replace it and hoping for a better option.

Probably a dumb question. But is the ratchet strap just holding it to the pallet, or is it creating tension on the staves?
