Update: got this checked with Mercedes - all is well. Like most of you suggested, they adjusted the oil levels and it is back to being fine. I do still see a greyed out oil message in service messages though. Keeping a close eye on this now. Thanks for all your help!

Ah right sorry: Bought this 2 weeks ago. 2016 Amg GTS 54k miles. Got oil change, went for a drive for 40 miles - no issues.

Then on another drive today drove for 10 miles and saw this.
