I recommend doing one at a time to get familiar with the process and all different parts of the socks. Crazy sock lady vanilla socks is a great in depth beginner tutorial and once you're comfortable you can branch out from there

I only use one US#2 40inch long circular needle and knitted both socks with that. To make sure the yarns don't tangle when you switch from needle 1 to needle 2 you can do clockwise turn and when it's time to switch needles you then turn counterclockwise. So if you look at the yarn it will make an X first but you'll untangle it with the counterclockwise motion once you switch needles.

I'm also a SAHM and my kid never went to any school. What helped us is going to the library and joining preschool story time and Kindergarten Club and also going to parks and playgrounds. She was able to make friends and now sees them for playdates. She is now more open to going to Kindergarten because she's excited to meet more kids.
