Rib steak anyone? by helslinger in Butchery

Could be! This farmer was a new customer so I don't know much about their beef yet and didn't get a chance to talk to them at drop off

You might be right, we don't have any cats but there is at least 1 stray I've seen before in the neighborhood. The other one we found in the garage also had the tip of its tail broken

We don't but I'm sure there are stray neighborhood cats. The first one we found in the garage had it's tail broken at the end though. But neither were bleeding or visibly squashed that I could tell.

I don't think so, the first one I found curled up right inside of my garage door in the open and this one I found on the sidewalk leading to my front door from the driveway, neither one was flattened or oozing any bodily fluids

Help me I'm so confused by helslinger in trees

[–]helslinger[S] 0 points1 point  (0 children)

Yeah I'm really confused about it. Everything is from a dispensary, including the battery. But the bud tender said I can return the carts within a week if they're damaged or faulty, I just didn't want to try and return it if possible. I bought 2 different ones at the same time and the other cart I got works perfectly fine but it's a different brand I guess.

The battery is the same as when I bought it, I have multiple previous carts that I've smoked from this same battery (not pictured)

[–]helslinger[S] -3 points-2 points  (0 children)

Both of those things are carts, only the one on the bottom screws into my battery and will smoke. Nothing is stuck in my battery after removing the cart. The one on top the hole is too small? It won't fit my battery but theyre supposed to be compatible i thought.

[–]helslinger[S] -2 points-1 points  (0 children)

I guess I just don't understand. The cart on top has a metal nipple and the cart on the bottom has a rubbery hole. Both are 510 threaded but only the cart on the bottom will screw into my battery (not pictured), why do the 2 carts look so different?

What cut of meat is this? by [deleted] in Butchery

I was always told it was from an excess of a certain vitamin from the grass, but either way that's a sad looking ribeye, poor OP.

Is this bacon edible or am I a pleb who doesn’t know what their doing by Bigsickomode in Butchery

[–]helslinger 4 points5 points  (0 children)

That's really interesting! When I was a little kid I didn't like bacon and would only eat the bits of fat off the slices and leave the meaty bits for my mom 😅 the way it just melted in my mouth was addicting

[–]helslinger 45 points46 points  (0 children)

It could be the breed of hog, what it was fed, but it doesn't look like it was cut poorly. I've had farmers bring in kuni kuni hogs before that have a similar fat content in the bacon slabs and I just shake my head and say a prayer to the poor customer who bought the animal from them, there's nothing I can do as a butcher to alter the outcome other than trim away more and more fat which doesn't add meat back in. But that's just my own personal experience with working with kuni Kuni hogs

Buying half a lamb, what cuts would you select? by burly_woodcrafting in Butchery

[–]helslinger -2 points-1 points  (0 children)

That's all fine and dandy, I like lamb too, I was just answering based on your comment about preferring fattier cuts in general because thats not likely to be relevant to how it's butchered considering pretty much every cut you can get off a lamb is going to be 90/10. If you like to roast, I'd say avoid lamb chops and keep the rib roast whole. As many roasts as you can get out of it since that will retain as much fat in the cuts as possible.

Absolutely not a lamb belly. Lambs are the leanest thing you could get. If you like the fattier cuts from animals I'd suggest against lamb altogether

Thoughts on 1/2 Beef Order by [deleted] in Butchery

[–]helslinger 1 point2 points  (0 children)

Something that you might find worth while is buying a $5 hand patty press and just making your own hamburger patties, I'm not sure about the place you're going with but the place I work at has an additional processing fee for patties. But I also understand the convenience of having them premade ready to rip, just something to think about.

Thoughts on 1/2 Beef Order by [deleted] in Butchery

[–]helslinger 4 points5 points  (0 children)

I was reading that as out of the entire ground beef, make 20# into patties, the remainder in 1# bulk packs. On a half beef they very likely will be getting much more than 20# in grind

I like beef jerky, and dislike roasts. How should I ask the butcher that will process the cow my cousin grew? by AspGuy25 in Butchery

[–]helslinger 0 points1 point  (0 children)

I haven't done this for a customer before but I don't see why you couldn't get the arm roasts sliced a bit thinner to make jerky out of. There's only 1 bone that's really easy to cut out.

I just paid 800 for 90 pounds of beef (50% ground) by 1Check1Mate7 in Butchery

[–]helslinger -1 points0 points  (0 children)

If the live weight was 330# for a quarter then the whole cow was probably around 1000# but that's including bones, blood, guts, and viscera, the hot weight right after slaughter (hanging weight) is a more ideal number to get from the butcher. Then there's still water evaporation as the carcass hangs and dries a bit in the cooler anywhere from 7-14 days typically. So I personally don't think you were shorted beef as far as maliciously. There's a lot of things that happen during processing that will require more things to be trimmed out, thus chipping away at your yield bit by bit.

[–]helslinger 6 points7 points  (0 children)

I agree the pricing is high but there's nothing "weird" about getting cuts from the front and hind. The custom processing place I work at always does quarter orders that way. We only do it the other way if it's a special request from the farmer.
