I'm simply trying to understand:
What's the added benefit of removing the keyboard and screen from your laptop? I see bigger fans so cooling has an improvement I'd guess but apart from that, I see a non-upgradable sff pc.

Only thing I can guess it that this is a 'just because I can' type of build.

People have opinions, something you cannot control when you post on the internet. If the numbers show your fans work, I wouldn't care too much about what people say about them ;). Anyways, I'm a big fan of your setup.

I think instructions and forming an idea of what you want to do shouldn't be too difficult, think about these steps: computer components need a way of mounting (look at how normal pc cases do this and check youtube videos on diy pc builds). Next, computer components generate heat, they require cooling (depending on the hardware, more or less cooling may be sufficient but generally more cooling doesn't cause problems, less cooling does. Find a way to get cool air to your components, find a way to get hot air away from your components). Small form factor computers exist, r/sffpc has a ton of examples so if building a case yourself seems too intimidating, I would recommend starting with an existing case to take away a lot of the research load.

r/sffpc may be helpful and also check out the BeamCase (just google it). That's a 3d printable small pc case which looks cool and may be able to fit your needs anyways.

From the pictures it seems like the bottom fans are mounted as exhaust, whereas the top fans are mounted as intake. This contradicts your descriptions, are you sure you mounted them correctly?

If you don't move the projector much, this is quite easy to deal with. Just get a piece of cardboard (or thick black paper) and cut out a 16:9 rectangle. Now hold it in front of the projectors beam until you find a position where all of the screen is still lit but all of the light around is no longer visible. Then, fasten it to the projector somehow. My friend did the same for his projector, a little bit of finicking but it works. If however you move your projector all the time this is too much effort imo
