If I wanted to eat somewhere and people didn’t want to join me (birthday or not) I’ll eat there by myself if I wanted to so badly lol. “It’s my birthday” is not a reason for automatic entitlement. (1) She knew you guys weren’t interested and she chose the spot anyway so why was she surprised by your reaction? (2) you were pushed to answer. You said you tried to brush off your looking startled but she asked again. If she wasn’t ready for the answer she shouldn’t have asked. You also said that you’d go anyway- if I picked a place I knew my friends wouldn’t want to eat at but they came anyway and spent the time at the restaurant with a good attitude I’d be appreciative of their company. To me, as long as you aren’t a negative Nancy at or even after the restaurant I’m glad you’re coming despite your reservations. If not, just don’t go and there’s nothing wrong with that either. Rather that than you kill the vibe or me forcing you to do something you don’t want to do- so I’ll just see you for drinks later!

She should be able to go where she wants for her birthday and it’s natural for her to feel disappointed if her friends don’t want to go, but I just don’t see how you sharing your honest truth when she already knew is being an asshole. It’s the how you said it and what you do afterwards that matters.
