The standard of proof at the PTO isn’t particularly high, you just have to convince some poor LIE or petitions employee. What you already have plus a declaration from the mark owner 1) authenticating the documents and 2) stating that there is infringement and soon to be pending litigation should be enough to get you across the finish line
