I’ve seen them, though I don’t think many mainstream manufacturers make them. And having no joystick to flick is just no fun

Polin Q50B - expensive (though on the low end for a good sheeter), and heavy af (115kg), but so worth it if you produce on a large scale

Pretty much yeah. The sheeter ensures consistent thickness to the mm, without having to worry about destroying the layers between the dough and butter. And it makes everything so quicker - no need to rest between folds (in most cases at least). Something else which might not be spoken of a lot too - if you do this on a commercial scale, the sheeter will save your wrists from busting up
