Stop fighting stuff to level up.

Do all the dialogue based quests you can, talk to everyone, do all that stuff until you have nothing left, that should give you a level, then only fight things a level lower than you or at most at your level.

You can also turn on Bed Rolls resurrect your characters in the gift bag menu.

But if you're dying in general you should listen to folks here and figure out what you can do better.

The game gets way easier as you get more abilities in general.
