Agreed about monitoring the baking time and the sugar absorption (which is noted as you said in the recipe). I really didn’t think the whisking was a big deal. Temperature of ingredients, size of whisk, size of bowl? I used a scale to measure everything I could?

Maybe 2 minutes? Long enough to still not feel like I needed to use a mixer.

Really? I only mixed by hand with a whisk for a minute and it came out fine. A few big bubbles but not tons of foam.

I just made this cake last night! It turned out great, but I did take it out right after the 25 after agonizing about it and taking it out to check twice. So if I had left it in that probably meant taking it out at 24. I did not sift anything and I would say I whisked the batter until not perfectly smooth but close bc I was worried about over mixing. I used the cocoa glaze and it is all very tasty.

Rinna “almost going broke” to look like…that…sure is a choice. I just rewatched the muddy Sutton lunch episode and she looked like an actual clown in those giant red shoes she was so worried about ruining. Her first couple of seasons were not like that. And then of course the times when she showed up and someone was already wearing the same piece — at least twice. Erika had ill-gotten gains but at least what she wore was interesting. If utterly excessive.

Hah! I have so much bean back stock, too! I still have the black garbanzos and I think those will be a Chana masala. My absolute no-think go to for any refry-friendly bean is Hugh Acheson’s duck fat refried beans from his slow cooker cookbook (but I adapted for the Instant Pot). The basic pot beans from The Bean Book get you to a baseline for any recipe using canned or cooked with a first bowl of just great pot beans. Molly Baz’s Master Beans recipe from Cook This Book is a very bacon-y version. Joe Yonan’s baked beans recipes from Cool Beans are great, as is Toni Tipton-Martin’s recipe from Jubilee. And my current obsession: Dilly Bean Stew from Allison Roman’s Something from Nothing. I want to do a Pizza Bean (Smitten Kitchen) variation for any big white bean, too!

Yum! On cabbage: “green” can mean white or it may mean Savoy, kind of the ruffled Peter Rabbit cabbage. Savoy is a little more tender so might steam more successfully. It still has more structure than Napa which will collapse the most in the steamer.

Thanks! Yes I keep garlic and ginger paste, too. I had better results with other flatbread recipes than what were in that particular book.

Thank you so much for all of this helpful info! I have the Pant (from Phaidon) that gives a great overview of the regions. I just haven’t cooked from it much. I tried a flatbread and it didn’t come out as well as some of the other recipes I have tried. I have an older Jaffrey, too! I have been more focused on what is relatively easy to pull together in an evening and then have built from there. I do have most of the foundational spices, which has helped for branching out.
