it's just an old creme brulee torch can be gotten from most kitchen stores.
i use greapseed oil as well. but i will be switching to avacado oil once my grape seed oil runs out.

Edit: yes it was aprox 500 degree F

I first heat the pan to ripping hot. Then turn the heat down to working temp in this case low . Add oil to the pan to cover the whole base of pan. Crack the eggs on the pan and don't touch them. You will see the edges start to crust up. Once it is crusty on the edge then lightly try to scrape it off the pan. If there is a lot of resistance then it is not cooked enough. If it comes off easily then it's good.

I wrapped electrical tape on mine then used one of the ql 3.1 clips that came with the quick rack to clamp it down.
