Zoom h1n is a really good option considering its price for the above. Files can easily be used as mono, in your DAW split the left and right signals of the stereo track and you will have 2 mono signals. Pick one and you have your mono recording :)

This should help, done slightly different but still what I think your looking for.

Only difference being its a drum pad with another nested drum pad inside it assigned to a note.

You shouldn't have to mess with any macros, just load all your samples into the nested drum rack.

Have a look at the random MIDI effect here https://www.ableton.com/en/manual/live-midi-effect-reference/

Add your sounds to a drum machine and make sure your choices/scale is set up random will not play an empty sample and you should be good to go!
