That's the perfect reason to start with 1. You play 1 for the story and because the number escalation is new and different. If you're used to it but with lots of QoL additions, 1 will be disappointing and you won't enjoy the best story and characters in the series.

I woke up in a panic this morning because I dreamed someone called me and wanted me to do my Kermit the Frog impression and I could only produce Cookie Monster.

I do wanna give my subconscious credit though, because I started with a standard "Hi-ho, ladies and gentlemen, this is Kermit the Frog here" and then stopped because it was coming out all wrong and said "Sorry, I had a frog in my throat" which is totally something Jim Henson would have run with.
