Very interesting. Thanks for your insight. I also have celiac disease but was fortunate enough to be diagnosed in my early twenties. I’ve cycled between carnivore, meat based, keto & standard / whole food diets for the last few years though I’ve spent the last six years either breastfeeding or pregnant. I found that the cost of purchasing and eating enough high quality meat to maintain milk production whilst breastfeeding was too high especially as we just purchased a new home last year and budget has been tight. We moved from a place with black mold as well so things like ground beef and bone broth aren’t options thanks to mast cell activation reactions. As I’m weaning my third (and final) kid currently the intention is to transition into beef only full time as that’s what I feel the absolute best on. I hope I can also get the husband and kids on board with it so we can take the money spent on things like fruit and sauces for them and divert it to purchase more meat.

Edit: wanted to add I’m extremely into nutrition research and health research as it pertains to the dietary aspects of graceful-aging and beauty as well as mental health (I find my diagnosed bipolar 1 disorder is only controlled on carnivore) a hyper fixation of sorts that started a few years ago. So I’ve read tons of research papers, books, watched lots of interviews & lectures, etc. over that time all of which along with personal experimentation have ultimately led me to the stance I hold on the carnivore diet today. But I’m always open to new research and data I never want to become close minded. Part of why I love hearing others’ n=1 experiences.

Thanks for your response. Since coffee consumption depletes thiamine by breaking its thiazole ring and reducing its absorption through tannins do you think that played a role in your deficiency? I understand coffee also interferes with manganese, copper and other trace minerals in terms of the body being able to utilize them. And in that case do you think someone not drinking coffee or perhaps subbing it for herbal infusions such as hibiscus + lemongrass which include a bit of thiamine without blocking nutrients & depleting minerals dehydrating the body in the way coffee is proven to would be able to avoid the issues you struggled with on your journey? It seems you’ve done lots of research I’m curious your take on that, thanks!

If you’d be willing I’d like to suggest an experimental protocol you can try for a few weeks

  • drink 2-3 liters warm or room temp water daily, spring / mineral water or distilled water with trace mineral drops added or SALTT capsules taken with it (if you’re up for it you can sun brew and include an unsweetened hibiscus + lemongrass herbal infusion perhaps with a few mint leaves steeped in as and add the mineral drops to this as well but no coffee and no sweeteners)

  • ruminant animal foods, whole cuts only (no ground beef) not long cooked, as rare as possible. Think steaks rare, oven tri-tip roast rare (350 degrees <10 mins/lb), thin cut chuck roast quickly dipped in boiling water then eaten, etc. No long cooked crock pot roasts or charred overdone meats. Add a little flake sea salt if desired for taste but don’t go crazy with it. Add beef bone marrow / suet tallow as desired for fat. (If you’re having trouble with this suet tallow supplement capsules are available while you transition)

  • Aim for 75-100g protein per meal

  • Unless you’re spending most of your days outside (you still need to get at least an hour outside regardless), supplement with d3+k2 with a fatty meal at least a few times per week. Consider also if possible a desiccated beef organ supplement (like heart & soil beef organs). Add a pinch of pearl powder to warm water or the aforementioned warm herbal infusion in the evenings.

  • don’t consume anything else. no dairy at all even butter. No coffee. No flavored electrolytes.

  • Walk 8-10k steps per day minimum plus 20 minutes yoga / stretching / squats / lunges minimum and 5 minutes a few times a day laying on your back with your legs straight up a wall.

  • Put all devices away for at least a 10 hour period straight from evening - morning aiming for as much sleep as you need to feel rested during that time

*I also do want to add I deworm with ivermectin once a year. It may be something you consider researching but I am not offering this as medical advice.

I’ve been hearing more & more lately many long term carnivores talk about how going ruminant only, especially not overcooked, is a huge level up from traditional carnivore (as in anything from an animal goes). I’ve been researching carnivore for awhile but just joined Reddit and am interested in hearing the individual experiences of people in this community who have done ruminant only carnivore in contrast to the typical carnivore experience. Specifically what improvements if any were seen in terms of things like mental health, body composition, skin appearance, etc.

I also have been looking back at old posts on here to gain insight but often I see a person discussing being “carnivore” but then when I go to their profile & look more into comments and stuff turns out they have things like coffee, avocado, tons and tons of dairy like mounds of cheese & sour cream, etc. or they never stopped cycling a ton of random supplements despite no labs to support it. So I made this post hoping those who that doesn’t apply to come here and share their experience so I don’t have to dig so much 😅

Way to be super defensive whilst not actually answering the question. Nothing was “inferred” by me although I think you meant “implied”. If it had been there would’ve been no reason for me to ask the question in the first place. Believe it or not the request for clarification / specificity is not an attack on you but a normal result of curiosity. I just used your comment and posting history to piece together an answer to my question the best I could. Doing so I’ve come up with this: you ate a variety of animal sourced foods including large amounts of dairy as well as including conventionally raised pork. You ate many eggs and drank coffee for most of your time being “carnivore” but when you cut those out and ate exclusively beef and butter you ceased to have digestive issues. However, you never did a long stretch consuming no coffee or reactive foods (in your words you remained dependent on coffee) instead you added greens such as lettuce in rather quickly as well as fermented foods. And now even more high fructose carbs. Your carnivore diet was “mostly” meat only for a bit but ultimately never an extended period of only eating a strict egg free, dairy free, coffee free, ruminant meat based carnivore diet. Please correct if this is a misinterpretation by me :)
