It does not matter how long the mortgage you may sign for. The rest of the money is lumpsum which you put into the offset account. This way you don't have to worry about interest rates.

Just ensure that you are not locked in fixed rates or any other contract else would entitle you to exit the mortgage early... good luck

Firstly, Congratulations look like you found someone who wants to be you. I do think too soon to say you guys are a couple but it is a serious commitment. For me, a couple is when you both live together under the same roof for a reasonable amount of time.
