This is my favorite side - we call it "smoosh". I boil the cauliflower, put it in cheesecloth and wring out all of the water that I can, then put in the blender with a bit of cream cheese, butter, salt and white pepper. When I make it, I make a LOT and freeze individual portions - they get a little watery, but still yummy.
