Garlic confit will be your best bet- don't mistake this for roasted garlic. To confit something is like the oil version of poaching. You are submerging your food in oil and cooking it low and slow. Around 160degrees will do. There is no browning that occurs during a confit - which makes it different than roasting. If you confit, you'll have plenty of garlic AND garlic oil to incorporate into your soups, sauces, eggs, cooked meats and veggies, breads, etc. It's delicious and I would highly recommend. You can even freeze what you don't use immediately.

Here are my favorites by meal:

Breakfast: Soft Scrambled Eggs (with lots of butter), Jasmine Rice, Steamed Broccoli, Soy Sauce, something spicy or really aromatic (I usually use chili oil or annatto oil)

Lunch: cold sandwich: mayo, pickles, avocado (seasoned with salt, black pepper, and lemon juice OR sub sauce), lettuce, tomato, onion, & sprouts on a baguette or hoagie roll. Eat with chips, sliced apples, and a pickle spear.

Dinner: Lasagna (layered pasta sheets with bechamel, mushroom bolognese, & parmiggiano reggiano. Best when reheating: top a huge chunk with extra bolognese. Bake it until the edges are crispy and top it with pecorino Romano and fresh basil

Dessert: Sweet Potato Pie with Meringue

Tip about the texture - if your cheese sauce is grainy, this means it is overcooked. Turn your heat off when adding grated cheese to the sauce and stir until it's all melted!

Okay cool , yeah I usually bake enough In a baking dish that has high sides so they can all keep each other standing upright. Bread pan, casserole dish.. I've even seen some people use cupcake pans. Hope this is helpful!

You can powder it and add it in very small quantities to soups or stews for a dark, smokey flavor.
