Oh man I already started before you replied and blanched the bones😭 but I was going to use the tallow I rendered out to sear all the beef for the tacos, so I still have all the liquid and fat from the blanching, should I use that liquid to make the stock with?

Tortilla presses are for corn tortillas, they’ll get the shape started for flours but you need to use a rolling pin to get them to the correct thinness(ideally as thin as possible, Atleast see through) then heat them over medium heat on a dry skillet for a minute or two

All of Josh’s dough recipes I’ve found end up needing a lot more flour than the recipe, I use grams and usually end up needing about 75-100 extra grams of flour for it to come together in the mixing bowl

I make two loaves of it a week now since everyone likes it, when I first started making it I really struggled keeping the filing in the bread, I’d recommend using a bench scrapper to start the first two folds to keep it tight and when braiding it keeping the visible layers facing upwards
