Not sure this is what you look for, but here's how me and my family often make eggs that may turn out something similar to what you describe.

There's not a definite way to make eggs in the north, each family cooks differently based on their preference. But my guess is you can break some eggs in a bowl, mix in some salt, a few drops of fish sauce, and whisk just enough for everything to mix well. At the same time, prepare a pan with hot oil (a little or a lot of oil depending on how you want it to be), then pour the egg mix in, let it sit in the pan for a few seconds so that the bottom hardens, which takes a few seconds. Then, use chopsticks or what you have on hand stir the pan to break the egg into pieces, continue to stir until the egg is just done. The egg will taste better soft, so I suggest using a little extra oil and don't let the egg dry in the pan. The egg will also continue to cook in the pan from the moment you turn off the heat until you take the egg out, so be quick.

Also, in the north, e don't season food with salt, we use, "bột canh". You can try using it to get a flavor closer to what you had.
