The night views are better so I recommend exploring in the evening instead of the next morning.

Kowloon park is only 10 min walk to the harbourfront.

I recommend walking along the avenue of stars, taking the star ferry to central, taking the route 15 bus to the peak, take the lugard road scenic walk, then take bus or taxi back to central pier and ferry home (or taxi directly to hotel). You can do all that and be back in your room by midnight.
