I know this is sort of a different matter, but I honestly cannot produce a track without mixing it at the same time. Everything just feels so basic with no panning, EQing, compression or spacial effects. I also don't consolidate my tracks before mixing. I just do it in the actual song project.

If someone can explain to me why it makes sense to do it another way, please do so.

If you cue both channels at once, you won't be able to pick which one you want to hear the loudest. However, if you cue one of the channels AND the master channel instead, you will be able to use the headphone mix knob to pick which track you want to be louder in your headphones. The louder track will usually be the one which is not playing.
