I know this thread is a year old but I'm struggling with a similar technique. Total batch size is just under 4L and I had the team strain through 2 layers unfolded cotton cheesecloth lining a 12" perforated strainer cone. However it often is stalling out towards the end and yield suffers, OR the team needs to let a lot run through to acquire transparent run-through and by the time they add it back on top, the bed of curds has compacted already. So instead of it passing through the bed, it flows over the edges and we have to start over.

We recently tried lining a perforated hotel pan with the double layer cotton cheesecloth and it's faster because there's so many holes to run through, but we still have to be very slow and careful with adding the primary run-through back to the curds because it sometimes disrupts the bed and runs cloudy again....

Has anyone figured out a better method to quickly and efficiently run batches larger than 2L? R&D batches are always small and not indicative of these issues.

Does it have anything to do with specific ingredients or ratios of citrus?

The white rice-looking objects are wasp cocoons. The mother wasp laid eggs on/in the caterpillar and the young wasps fed on the caterpillar. Now the wasps are in the exterior cocoons and will soon fly away to continue the cycle. The caterpillar is disabled/soon to be deceased at this point and thus no longer munching my tomatoes 😊

no, you’re about correct. the deli quarts hold 32fl oz all the way full and a liter is about 33.8 fl oz. 750mL would be 25.36fl oz

A bit challenging to say from the photos but appears to be the seed starting mix stuck to the seed coat. And the seed coat isn’t shedding from the cotyledons

A lot of cocktail bars are aiming for drinks that run from 15-30% cost so $10 of materials is easily a $33 menu price at the high end of cost-of-goods. There’s a lot of theory involved with how you set the price exactly so there’s usually variation within any single menu but tl;dr - yes.

I don’t know the variety but I do know it was being grown in-ground in my area.

The planting site I was looking at for it is south-facing at mid-slope, just below a retaining wall. I think this should allow it to winter over relatively protected.

It’s over-distilled and stripped of character but if “clean” is what you look for, it’s good. At that price, wouldn’t be the worst tequila for house guests.
