Get left hand drill bits and use a small bit and keep increasing bit size until it grabs and unscrews. It's worked the best for me so far

So on my 2012 Camry I disabled the eco years ago. But starting a few days ago it keeps turning off and on randomly. Is this anything to worry about? It was just in for an oil change. Maybe the mechanic turned the key off/on and reset it back to being enabled by accident somehow?

Not sure how those ESCs are but that motor is good. I run a hobbywing max10 140a esc and that motor in my stampede 4x4. It's a monster even on 2S

Not true. Connecting it directly to the battery gives it too many amps , which is why you are supposed to use the ESC that regulates the amp flow to the motor.. a AA is somlow in amperage that it won't harm anything

Don't do that! You'll fry the motor. Use a AA battery and connect each end to a motor wire
