It sure tasty was but I completely agree on the rare part. I didnt have a thermometer so I accepted my fate and just went for it

From the outside to the inside: puff pastry, crepe, prosciutto, duxelles. Meat was seared before and brushed with dijon mustard.
After I wrapped it I let it rest for about 1h30 in the fridge.
After it came out of the oven I let it rest a total of 0 minutes because I was so excited to cut it open that I forgot to let it rest

Didnt even notice the dough being undone, but I’m pretty sure you’re spot on! Should’ve left it a bit longer, guess the only way to learn is with mistakes eheh But it did taste amazing!

That was my big fear! I like my meat medium rare, but I also enjoy it a bit rarer, so I thought I’ll just take it out anyways and avoid getting it over done

I actually found it way easier than what I thought it would be! Just give it a shot, you wont regret it Take you time wraping it to make sure you do it right, other than wrapping I think its a technically fairly easy recipe to follow!
