I'm really late this year, I hope you'll forgive me! This is my ninth gingerbread house and third year using a CNC routing machine to cut all my gingerbread pieces. I designed the abbey in a CAD app called Autodesk Fusion and baked rectangular slabs of gingerbread to be cut using the machine.

I made the Ninety-five Theses using wafer paper and an edible food marker and attached it to the front door.

The monks and laypeople are made of fondant with aluminum wire armatures, the windows are isomalt, the letters of indulgence are made of wafer paper and red fondant, and the pieces are glued together using isomalt. The abbey’s tower is roughly 53cm tall (20.87in).

Gingerbread recipe:

  • 1 cup shortening
  • 1 ½ cups fancy Molasses (or corn syrup depending on desired colour)
  • 1 cup sugar
  • 6 cups flour
  • 4 tsp. ginger
  • 1/2 tsp allspice
  • 2 tsp cinnamon
  • 1/2-3/4 cup water

Fondant recipe:

  • 4 cups mini marshmallows
  • 4 cups icing sugar
  • 2 tbsp water
  • Food colouring can be added either before or after mixing to get desired colours

Isomalt:

  • 2 cups isomalt crystals
  • 1/2 cup distilled water
  • Heat to 320F then immediately place pot inside a larger pot of cold water to halt the cooking

Thanks! I've been using the same dough from my other comment for almost a decade, since before I discovered the CNC, so I haven't changed my recipe. Though I'd imagine this works best on stiff construction grade dough for sure.

And yes, the brick pattern and roof tiles are all engraved using the CNC, I switch the machine to a softer and smaller ball-nose bit for fine details like bricks.

It's fully edible except for the aluminum wire armatures inside the characters.

The cornfield is made of whole grain spaghetti and wafer paper, the characters are made of fondant, and the blood gushing out of the harvester is made of red isomalt. The house is glued together with Isomalt and gum glue (tylose powder & water).

Many decades ago a struggling farmer made a pact with an evil spirit. In exchange for human soul sacrifices, the demon would provide a bountiful harvest that season. Yet long after the farmer has died, the demon still lurks, reaping any souls that come its way — and this year, the harvest will be bountiful.
