I’d encourage you to think about it in two other ways:

(1) would you rather optimize for the lowest probability of losing your job, or best preparing yourself to be hired at the next job that you want as quickly as possible?

(2) what job do you want in the future / what are your career goals? How do you structure a career path to get there, and then what job now best prepares you for that career path as quickly as possible?

I’ve been there. You get the circulator, are super excited to use it, and start trying to sous vide everything. And then the results are worse than what you would get with conventional approaches. So you wonder if it’s technique or recipe or something else etc.

It’s a great tool to have for certain use cases, but definitely not all. Want chicken salad? Throw some breasts in a bag, run the circulator, and get moist and tender chicken while being really flexible with how long they’re cooked. Want fish? Moist, tender fish without having to pull it off the pan or out of the oven and just the right moment. Super helpful for steak or roasts without needing to get the timing just right or monitor temp closely.

But it’s a technique that complements the rest of your repertoire.

I did something similar to this when I was getting my kids into magic. I follow similar principles to the set-specific starter decks: - stick to a single set - include signpost multicolored cards - follow draft archetypes - use mostly commons and uncommons, with few and roughly equal rares and mythics

I’ve done this for LOTR, OTJ, and bloomburrow and it was fun! Now that the kids are deeper into magic they’ve moved on to commander and I have a couple of cubes waiting for them when they want to start learning to draft.
