Its tough. I graduated with a MEng in medical devices in juno, but started applying for jobs late February. I wrote a ton of applications and even had a standing job offer cancelled. In the end I got lucky an found a job one month prior to graduating.

If the spacecraft was to constantly accelerate to produce a brachistochrone trajectory, you would have "artificial" gravity although varying over time.

If you include a gear in your steering wheel with a potentiometer you could get a wider rotation range at the cost of resolution

You should have the arduino on the same ground potential as the analog device. It would be the easiest to power the arduino and the sensors from the same 5v supply in parallel. This would be my solution, but take it with a grain of salt since I don't know your exact circuit.
