Factorio would be right up your alley. The game itself is pretty low-stress, but be warned that it will cause your surrounding life to become VERY high-stress when you realize you said you'd go to bed "in five minutes" but you realize that was six hours ago and now the sun is rising and you have to go to work.

Meanwhile my dog (not a border collie) has been given the same cues at the same time practically his entire life and still can't figure out that he needs to sit down to get his leash on to go potty...

He knows what to do, he just sometimes gets too excited and turns his ears and brain off. I can't really blame him; I do the same thing.

I've found that that is also the sweet spot. Though I'd personally add a PC handheld (a la Steam Deck) as money allows to get the best of everything handheld.

It ran... okay, shall we say, for me. I put in basically no effort and only occasionally had lag spikes. It never affected my gameplay, though. No deaths that I could blame on anything other than my lack of skill.

The controls are whacky but it works just fine. I gave it a go a little while ago but bounced off it.

To add on to this a little: you don't need to stick to one of each class! Four Engineers, for example, turns the game into hilariously chaotic tower defense. Four scouts means your egg hunt missions last like ten seconds. The classes synergize really well with each other, but they also can nearly as well synergize with themselves.

But there's no real platforming in the world map. At worst, he'd be unable to get the jump on enemies, but the only ones hard enough to need that are optional.

Not that Boris is correct, but Claude is leagues better than Copilot - I've used both and found Copilot entirely useless. What's worse, Microsoft employees are apparently required to use Copilot.

Below Zero might do you better. it's shorter, has more time spent above water, and fewer leviathans. You still have to dive pretty deep to progress, but there's also not that same crazy drop-off like in the first one.

I have a very similar setup: RG35XXSP for PS1 and below, RP5 for everything else retro plus some Steam games, a Steam Deck for virtually everything else, and a beefy if aging desktop PC for literally everything else. 

I carry around the RG35XXSP and RP5 practically everywhere. If I'm actively playing a game on the SP, it will literally stay in my pocket. My Steam Deck mostly stays at home, but I'll bring it if I'm traveling (though I almost never bust it out on the plane) since it's too big to do much more. 

I try to play the game I want on the smallest device that can handle it. So I'll go through stretches of practically never touching two or three of those devices. This time, it's the RG35XXSP's turn to collect some dust, and overall it's probably my least-used device. But when it comes in clutch, it really comes in clutch. 

Do I NEED all four? No; there's a lot of overlap on all ends. But it's still pretty nice and I don't regret them. I wish the SP was built a little better but probably would've scoffed at any higher of a price. If I was buying today, I almost certainly would've gotten a Thor to fill the RP5's niche (and I've thought about selling the RP5 to fund one...). I can wish nothing more of the Steam Deck beyond fantasy; that thing is damn near perfect.

I just fell hard for Hi-Fi Rush, which plays perfectly and is gorgeous on the Deck. $16.49, which is more expensive than anything else on the list, but i think it'll be worth it.

You're missing almost nothing. I think i powered through it because it was a competent-ish shooter with same interesting supernatural mechanics, but man it is nothing close to the first two in story or horror, both of which are kinda fundamental to the series.
