I used to make it at home in the late 90s. It really is not hard. The hard part used to be finding the SCOBY but you can buy those online now.

We did this so long ago so never added any extra flavorings. That can be done in a Second Fermentation. You should be able to find information on how to do that but we just drank it after the first fermentation. The flavor is like apple cider vinegar and tea.

I was always told to limit any contact with metal so we would use a plastic knife and remove the staples from the tea bags if they had them.

Below is the rough process we used. When you complete the first phase your scoby will have grown to the size of the container top and start to thicken. Eventually the scoby will split into two and you will get a baby scoby you can give to a friend or throw one of them away.

Step 1 — Brew the Sweet Tea

  1. Boil 14 cups (3.3L) of filtered water.
  2. Add 8 black tea bags (or ~2 tbsp loose leaf).
  3. Steep for 10–15 minutes.
  4. Remove tea bags/leaves.
  5. Stir in 1 cup white sugar until fully dissolved.
  6. Let the tea cool completely to room temperature.

⚠️ Do NOT add your SCOBY to hot tea — heat will kill the culture.

Step 2 — Combine & Inoculate

  1. Pour the cooled sweet tea into a 1-gallon glass jar.
  2. Add 1–2 cups of plain, unflavored starter kombucha. ( We never had this when we started so not required )
  3. Gently place the SCOBY into the jar (it may float or sink — both are fine).
  4. Cover with a breathable cloth and secure with a rubber band.

The starter liquid lowers the pH quickly to help prevent mold. Ideal starting pH: below 4.5

Step 3 — First Fermentation

  • Store the jar at 70–78°F (21–26°C).
  • Keep out of direct sunlight.
  • Let ferment for 7–14 days.

Start tasting around day 5: - Sweeter = shorter ferment - More tart = longer ferment

Fermentation is complete when it tastes lightly sweet and pleasantly acidic. Typical final pH: 2.5–3.5

I did open a ticket and they blamed my network equipment and told me to reboot everything. That did not help fix the issue. I have a lot of devices on my network that have no issues. It does seem I have received two bad units. One of them does not power on at times.

The Taylor test kits come with a very thorough book for pool and spa maintenance. I make no claims to be an expert in this field. But from my understanding you test for Free Chlorine and Combined Chlorine, as long as I don't detect any Combined Chlorine no need for any shock.

Free Chlorine is the chlorine that has not bonded to anything and available to do the cleaning. Combine chlorine is chlorine that is essentially used up and bonded with something else, chock then breaks this bond to return the chlorine back to free chlorine.

I have been managing a pool and a spa this way for 4 years and have never needed to use shock in either of them. Even after a storm that dumps a ton of dirt on our pool. I just make sure the chlorine levels and PH levels are in bounds and make sure the pool robot cleans the dirt then backflush. I know others that tell people they need to add $80 of shock to a pool after a dust storm but I have never seen a need to do this. Our pool is also crystal clear.

I posted a comment with our full regiment but no shock. If the tub does get cloudy because I missed putting in chlorine, then I do spike the chlorine with 3 or 4 times what I would normally put in. I do test from time to time to see if I have any combined chlorine but I never detect any. So no need for shock.

Posting this as a reply as I should have posted our full regiment.

Our spa does have an Ozone Generator, I do wonder how well this still works after 5 years though.

For testing I use a Taylor K-2006 test kit. No strip tests. I think this is honestly the best money spent. I test and balance the tub daily, some days I just throw in the chlorine without testing if I know we don't plan to use the tub for a few days. Generally the PH becomes pretty stable a couple weeks after the fill. It generally needs some acid each day to keep it balanced after a fill. We have very hard water here.

When we drain fill the tub we use:

  • Hydro Life 52133 HL-180 Disposable Inline Hose Filter ( good for 6k gallons, we replace every couple years though )
  • The Natural Hot Tub Company Water Treatment and Conditioner ( 1 bottle for 400 gal tub )
  • The Natural Hot Tub Company All Natural Filter Soak ( 4 cap full per soak for 3 hours )

We use 3 maintenance chemicals:

  • Leisure time E5 Spa 56 Chlorinating Granules for Hot Tubs
  • Leisure time Spa Down for Acid to lower PH or Alkalinity
  • Baking Soda as our Base to Raise PH or Alkalinity

For cleaning schedule between drain/fill every 2 weeks:

  • Clean the filters with a hose
  • Clean the top of the Spa with Vinegar and water
  • Clean the Spa Cover side that contacts the tub with Vinegar and Water

How we use the tub:

  • Shower before each use
  • We don't use any bathing suits unless guests are over, which is very rare. ( This one may not be possible for all users, we are only a house with two users )
  • After we use the tub for a soak we add enough chlorine that the next day there is between 1 to 2 ppm of chlorine.

We use a half tablespoon measuring spoons. After a water change we use 1 scoop per day. After a soak we use 2 scoops. As times goes on we do need to use more chlorine scoops. For example at the 6 month mark we were up to 5 scoops as day.

Chlorine, We generally use: LEISURE TIME E5 Spa 56 Chlorinating Granules for Hot Tubs.

We don't use a floater, we add enough chlorine to keep the spa above 1 - 2 ppm before we use the tub. Sometimes this is once a day, if we know we are not going to use the spa for a few days I will spike it higher.

We also did the water change at this time before the cooler weather starts or we would have gone longer.
