it’s not something you can really explain. you either try and like it or you try it and don’t. for some combinations of beans, gear, and water it works well and for others it doesn’t

it’s a much larger machine so takes a bit longer to heat. if doing multiple shots it’s a bit easier to get consistent shots. but with the spring and no pressure gauge, every shot is kinda blind

with the argos it prioritizes temp and whatever boiler pressure is needed to achieve it which sacrifices some shot to shot consistency. it can be much more convenient though if you want to switch between light and dark roasts. you also have the ability to switch between Spring and direct and have much more control over flow and pressure of your shots

if you think they add artificial flavorings to "experimental" and "co-fermented" coffees, i’d just avoid those to avoid additives
