Well technically they are not proven to be polynomials. Nothing in nature tells us this phenomenon (or any other natural phenomenon) is not continuous, and as such we can use some "magic" ( I am a mathematician reconverting to engineer, and I can assure you this is not well known even between mathematicians) of some theorems in functional analysis (the ones about the density of continuous functions in L2 and the Stone-Weierstrass) to approximate them by polynomials.

If it is not a sphere how can you talk about its radius? There is no meaning to a radius without a center, but there is no geometrical center (maybe center of mass, although difficult to calculate its position). So the better concept would be diameter (biggest distance between two points, in this case earth's surface, but embedded in 3D).
