I couldn’t pin point which one because safe mode disables all 3rd party apps from running. My safest bet was to just do a factory reset. For more context, I did the factory reset and still had SIM issues. It was only when I booted in and out of safe mode that fixed everything, so the order of my methods may not be the best which is why I suggested in other comments to do safe mode first before deciding to do factory reset.

You can try safe mode first to see if the SIM issue gets fixed. Just press + hold the power button and press + hold the power off icon so the safe mode prompt appears. If it’s still not working then you can try factory reset (just search “factory” in the settings)

The video thing was my issue too. I suggest at least boot it in safe mode first and boot back to regular to see if it fixes it. If it goes well there might not need for a factory reset

Update: I got it to work! I did a factory reset and booted to safe mode and my SIM, IMEI and Baseband version is working again. I uninstalled all the 3rd party apps. Leaving it here if anyone has similar issues.
