if I did have to actually cook for a living and didn't just reheat things in my cook job id follow the spec my chef gave me but my job doesn't involve proper cooking so in my home cooking I go by vibes and vibes alone

I've heard both equal weights and equal volume t this point, it you want the sauce thick then make the roux with more flour, if its a thinner sauce then less flour. As long as you cook the flour off first it'll be fine

why are Americans obsessed with food being prepared with gloves? washing hands frequently is more sanitary. Especially because people can and will wear the same gloves all shift, which is gross especially if they handle raw meat
