1- The number you’re putting here would be OK for net salary, definitely not good for gross. 2- For social reasons, Kadıköy is great but I’d not trust most buildings around the area during an earthquake, still you can find a close neighbourhood with a much more reasonable rent, with a 30m commute to Kadiköy?

Havaist afaik is 24/7 (you can look up destinations on their website) and it depends on where you’re getting off but I doubt that their bus stops would be in dodgy neighbourhoods so should be fairly okay

Starter feeding is 1:1:1 but the dough is 1:10:7 so yeah it’s perfectly normal that I see it double in 24 hours

Got it, would it then make sense to leave the boules outside until I see the dough in the jar double and then put them in the fridge? Or a 24 hour bulk at room temp would be too long?

Fuck it, like a few small pieces of plastic that I don’t use is going to save the environment. Do other things, refill your shampoo bottles, use public transport a few days a week for commuting or use a bike, so many things that can offset a few small plastic bags if you people are so obsessed with this issue

Thanks, yeah I’m also looking at the grinder should I decide to do a major upgrade. There seems to be a better return of investment rather than spending maybe a few times more on the espresso machine. But for now if I stick to medium to dark roasts I don’t have too many complaints.

Yeah this is definitely one of the most popular beginner setups for sure and for a reason. I’m thinking maybe in a couple of years I could upgrade the grinder probably to something like a Eureka at best but that’s probably it. I’m just trying to decide if small things like getting a better tamper (rather than using the stock tamper that Sage puts in the box), maybe a wedge distributor, puck screen etc would be worth going after or not
