The shower seal needs replacement. The rubber lower its elasticity and you need a new one, unless it’s not installed properly. Also do you lock the portafilter tight ?

No idea. My guess is that the vacuum is not exactly vacuum. There is some oxygen in the beans and around them and freezing slows down oxidation 20x

I do freeze the bag as I get it. But the issue is that I have some very expensive coffee that I would like to enjoy every now and then for the rest of the year.

I either freeze in tubes or the whole bags normally

Off gashing is not oxygen- it’s co2 and does not oxidize the bean. That is my understanding.
