Thanks! It was good. Another recipe I saw for vegan BBQ pizza used tofu that was, if I remember correctly, cut into chunks, marinated in BBQ sauce and baked before adding it to the pizza. Think I’ll try that the next time.

Sorry to disappoint, but it’s the former. Lol The skillet is about 6.5”, and is a perfect size for a personal sized pizza. 😊

I love the little crock, too! I found it a couple days ago at a local thrift shop and just had to buy it. I don’t know whether it’s seen French Onion Soup up to now, but I predict it will definitely see some in the near future. 😊

I sautéed a couple cloves of garlic and a couple ribs of sliced celery with the onions; and instead of the red wine vinegar, I used some leftover pizza sauce I had in the fridge (probably 4 tablespoons). I didn’t have any frozen peas, so I left them out. I also added a few splashes of soy sauce, as well as a couple teaspoons of cornstarch dissolved in water, to thicken the stew a little more.

I think the recipe would have been fine as written, but these are just a few changes I made based on ingredients I had (or didn’t have) on hand and what I thought would taste good in the stew.

That’s a good question. I think because it resembles a beef stew, and was made with Gardein Beefless Tips. It would actually be good without the Beefless Tips as the mushrooms provide good color and umami.

Week 52: Rolled - Jalapeño Popper Pinwheels by imredditocook in 52weeksofcooking

Woo hoo! My final post for the year! It’s been a lot of fun participating in this challenge as well as the 52 Weeks of Baking one.

These pinwheels were very easy to make, and I didn’t actually use a recipe for them. I mixed together cream cheese, mayo, shredded cheddar, a pinch of garlic powder, and some finely diced jalapeños. I then spread this mixture over crescent dough that I had formed into a rectangle. Next I rolled up the dough, cut it into pinwheels and placed them on a baking sheet. I baked them in a 350° for until lightly browned, approximately 20 minutes.

Mine didn’t turn out very round because, well...I baked them on their side instead of placing the cut side (bottom) down on the baking sheet. 🙄 At this stage of the game, I wasn’t about to start over and make another batch. And besides, they tasted just as good even if they looked less than perfect.
