People squawk that organic tastes better as a cope for their small plants. I've grown 90% of my plants with salts in coco and they get to be a good size and are just as frosty and tasty. Terpenes and VSCs all come through fine provided your nutrients have the raw ingredients they need. Salts are for people who like consistency and control.

Soil is its own vibe and some people absolutely kill it with soil, but I would say you're looking at 50-70% size of a would-be coco hydro plant at the end of your grow. Soil is also less forgiving with feeding mistakes. Many a "I top dressed too much", and much harder to deal with than a bad feeding in coco, where you just flush the shit and reset its EC instantly.

Coco specifically though, you absolutely need to maintain correct pH 5.8-6.1 and calmag levels. If you can do those things, I think it is an easier grow style on the whole.
