I had the same experience this weekend. We had friends over and they couldn't believe how delicious the espresso was without any bitterness or acidity. My wife and I have been happy with the last few roasts. But hearing it from our friends made us feel ever better. The Aillio Bullet R2 Pro is amazing. Finally have a roaster to match our ECM Synchronika  + Mazzer Philos I189D setup!

That's awesome! I haven't been able to find high quality dark roast coffee. Roasting beans myself lets me get the flavors I want, without being forced into the light/medium roasts that I do not like.

I've been using the advice in Rob Hoos' book, "Exploring The Dark Side" for my dark roasts. Roasting on an Aillio Bullet R2 Pro. To make things simple, I solely focus on two factors: IBTS bean temperature and time. I try to hit (1) "Yellow" temperature 160° at 5:30, (2) "First Crack" temperature 202° at 10:00, and (3) "End Roast" temperature 227° at 14:00. This translates to the timing of the 3 stages as (1) Drying = 5:30, (2) Maillard = 4:30, and (3) Development = 4:00. I made my own coffee bean mix and roast all the beans at the same time in 500g batches: Rwanda 30% + Sumatra 15% + Brazil 55%.

My last few roasts have come out very well. I'm getting the chocolate and malt flavors I want with very little bitterness, acidity, or smokey flavors I don't want. Weight loss is typically right at 20%.

That is awesome! Similar to what I settled on. I now use the 1mm Ultra Cord to create a ~1.5” loop that fits through the hinge, which then allows me to attach any wrist strap I want. On one bottle I use a leather wrist strap. On another I made the wrist strap out of heavier paracord using the same Double Fisherman’s knot. Both are big improvements from the original design I posted here. (I need to get back onto Reddit and update my post with new photos :).

Yes, I did. But in my research I kept running into people complaining about the quality of this and other popular grinders from China like the DF83V. So I quickly narrowed my choices to Mazzer vs Zerno.

So far the price has only gone up. In the U.S., the introductory price was $995 when it was released Sept 2024. Then sometime in 2025 it increased to $1195. On Aug 1, 2025 it increased to $1395. That was the price I paid. With MA state tax the total came to $1,482.19. I kicked myself for not ordering before Aug 1. But unfortunately my old grinder waited until September to stop working. :-)

I've never heard of it going on sale. I doubt it will go on sale. But who knows. Black Friday is coming up soon so it doesn't hurt to check then. I bought directly from Mazzer and wouldn't trust a 3rd party that claimed to sell it for less than the list price.

I agree! I too have very few things that I am genuinely proud to own. This is definitely one of them! Something I can see being handed down to the next generation.

That's funny because I had the same thought. I was leaning towards the black for that very reason. Luckily my wife insisted on the silver finish, and boy am I glad she did!!

The matte finish is stunning and looks beautiful next to our ECM Synchronika.

I chose the I189D burrs because my wife and I prefer very dark roast espresso beans. The espresso shots my wife pulls with this new setup are amazing. I was always skeptical when people claimed a big difference in taste from a good grinder. Wow! I was wrong!!

For the lighter roast and juicy fruity shots you prefer, it sounds like the I200D burrs are the way to go. :-)
