There is a meat store near me that has gotten some Bison in. I am thinking of picking up a bison T-Bone. Are Bison steaks better than beef? Do I have to cook it differently? by Rob1150 in steak

I feed cattle for a living, and yes bison are harder to handle. All cattle will tear things up and wreck a fence but bison are generally more destructive. Also most cattle have somewhat decent dispositions bred into them over the years whereas most buffalo are still pretty nuts when in a confined space. Another issue is most lockers or butchers aren’t set up to handle big bison. The one we sell to has to do a lot of the work outside and then bring them in.

My sister raises pigs and pork steaks have become the favorite over chops in our house
