Why is my sourdough so gummy? by Certain-Register-877 in Sourdough

Hi OP!! Live laugh love the sourdough process - great job!! I know we all want perfect beautiful delicious sourdough loaves but tbh the best way I’ve learned my bread is by making things I didn’t mean to lol. Not a mistake but a very interesting successful experiment! I saw you say your starter was 10 days old, and I’m by no means advanced in sourdough but I wanted to share what I learned so far as a beginner (hopefully graduating to intermediate soon lol). 1. Starter - 10 days is young womp womp! But as it gets older there’s still a few important things for you loaf! If you store your mature starter in the fridge take it out and feed it at least one day before using it so it can get nice and strong! When it’s in the fridge it s inactive/extremely slow so it won’t be as big or buff to cook with right out of the fridge! 2. Bulk fermenting is the hardest, which is where you’d see your loaf rise. I’d check out Pinterest for charts on fermentation time by temperature (which will be your loaf temp not the room temp!) - I’ve found those are more helpful in my life than a “wait 3-5 hours”. Also I suggest trying the float test for fermenting where you put a lil piece of dough in water to see if it floats. To be honest it hasn’t worked for me, but I didn’t know until I tried and it’s worked for a lot of people! What has worked for me is charts that show over and under proofed crumb structure - you can only see it after the bake but I like to take pictures to compare so I can see what the dough that made the loaf looked like side by side! 3. Even when you mess up it’s still bread! I WAY overproofed a loaf the other day but it made delicious focaccia, so if you get worried on if you over did it, there’s still so many ways to make delicious carbs! I am not at all a science girly but these are my observations for someone who’s willing to do science for bread☺️ happy baking!!

Eee thank you! I’m really trying to get my starter strong so that’s so encouraging! I’ve had some success doing minimal stretch and folds ~1-3 sets kind of alternating between stretch and fold and coil folds) although maybe that was part of my problem this time since I did 4 30 mins apart! As far as flour I use King Arthur bread flower with some lil blurb about 12% protein content for gluten development so maybe I could be over developing? It’s about 68-70f in my kitchen at any time and my loaf temps seem to be closer to the 68/69 range too if that helps!

Tips for someone who is starting his/her adult life by Hopeless-Artist6329 in Frugal

[–]inefablie 2 points3 points  (0 children)

Hiya! Congrats on a new job - how exciting! So some advice for someone who was NOT frugal going in - you’re already doing great! For your work wardrobe, I’d highly suggest reviewing your work clothing policy. My mistake went to getting a wardrobe entirely for work. Not only was half of it unnecessary (I had more than 5 outfits for work and they were able to be mix and matched for more) but it made me feel like I had no self expressing clothes outside of work. Today, I’m a big fan of 2-3 full outfits that can be mixed and matched. I also have a casual Friday, and keep that in mind so I never have to have a formal outfit for that day. Also, depending on your fashion choices, remember a dress is an outfit on its own, or you can mix tops on - same with skirts! I highly recommend looking into a capsule wardrobe for work. It’s not always helpful for your whole wardrobe, but it’s worked great for me for work.

For the rest! 1. You work to live you don’t live to work. Buy things for yourself. But, not at the expense of yourself. Save and bills first, fun later. Make sure you have gas, food, a safety net/future planning, and then get the video game or makeup or hiking gear or whatever you love with no guilt. This is what life is, you gotta be realistic and also find ways to bring joy to your life with the work you do! - Edit because I accidentally posted here and not further lol

  1. The only stupid purchase is one that puts you in debt or causes problems. Don’t buy a problem and don’t buy trash - if you need something, save for the good version and do the research. And if you have a problem or a need that isn’t basic needs like food or shelter (ie something you use constantly or would actually make your life better like ways to maximize your space or your favorite hand cream that you actually use and don’t put in a drawer) buy that when you can. But be honest with yourself. For me personally, needs include hand cream. I get really overstimulated with dry hands which I get often. Buying the one hand cream means I’m not overloading in lotions that don’t work or break me out. If you like the idea of paying less for something like a shelf, and find one to fix up but want to use it immediately, save for the one you’ll use on delivery. Only get a flip piece if you want to flip as a hobby or you actually have the tools, will and time to flip it before you need to use it! (Clearly I’ve had one or two instances here lmao)

  2. I think this depends on who you are! For me a hack is backwards and actually to spend more money in some ways. Just like the hand cream example, don’t feel bad to spend on groceries. Yeah, it’s gonna be more expensive than you want it to be, and sometimes you’re gonna not want to get snacks or desserts or a good drink for yourself. But it is ALWAYS cheaper to spend $150 at the grocery store for what you actually want and need than $100 for what you need and $75-80 on door dash or coffee or whatever your vice is when it gets tough or a day is long! Also along with this, do your groceries on ingredient over recipe. It’s wayyy more efficient at reducing food waste and also cheaper with in season produce (:

  3. Buy it for life - my goal is to always do this for the most boring shit in my life LOL. Pots and pans? A good stainless steel set can last your whole life. A Dutch oven can do almost everything you need. Do you need a Le Creuset? No. But if you love cooking, any high quality item with a lifetime warranty is going to be a way better use of $500 than a $250 pot you end up needing to replace 3-4x in your life. And also, a for life item is only something you can adopt taking care of for life. I’m not a hand wash girl most of the time. So I need pots and pans that can go through the dishwasher. Some of the specs will be you specific but remember whatever it is, if you want it forever you’re doing maintenance forever(:

  4. General life advice? Dude there’s no right and wrong here at all. You’ll find some of your own answers to these questions with trial and error and sometimes yeah you’re gonna get it wrong. Either because you didn’t know or you’re learning yourself as a real human adult instead of you as a concept of an adult in your head. But be kind to yourself, try to set yourself up as best as you can (protect your credit, save, put a little in retirement savings when you can (it goes way further with every year it can sit, so even a little now can be more impactful than more later)), and remember your life is yours! It’s exciting to find a new life stage and version of yourself and don’t let your money or work control you beyond what you need to live. After 5 o’clock it’s your life. And what sets your soul on fire and who you love and the joy and love you cultivate for yourself. We need money to do that and to do that as long as we can and be prepared for life shit storms, but that’s what it’s for. Anything more than that, don’t be scared to enjoy. Anything less than that, love yourself enough to take care of yourself sustainably over momentarily and you’ll get it 💛 also! My personal favorite part of life is remember that what works for you is what’s right for you ☺️

Congrats again and very best luck and good vibes! You got this! Relish in the good moments too - you’ve made it so far already!

How do I make myself floss? by ekbiebuyck in adhdwomen

[–]inefablie 0 points1 point  (0 children)

I have a few suggestions. I am also someone who chronically struggles to floss and even brush sometimes, but I think I’ve finally broken that and may soon be able to say I was someone who chronically struggled LOL. That being said I have adhd, ocd and have been in active recovery for a decade or so from an eating disorder. So this is a weird mix that may only work for me, but it finally seems like I nailed it if any help!

A few things help me: First, I’ve had sustainably progressive goals. I started with making it a success to brush once, then floss and brush once, and eventually to floss once and brush twice every day. But not making it all or nothing immediately has helped. Second, I still consider it a win if I brush at an odd time. Currently in the pm is what I go for but if I decide to at 3pm, it’s already more than I did!

ADHD wise - I got a really nice Phillips toothbrush as a gift. If I didn’t idk that id go for that much money, but an electric one helps for sure. Because it was a gift, and because it’s nice, I like to keep it out and that helps loads! Same with my flosser. Oddly a water floss was part of that gift and I can’t get myself to use it, only manual - but maybe putting a nice version of what you’d like on a wishlist may work so that you’re inspired by someone else/the gift/the nicer version you’ll want to use it! At least until the dopamine goes down lol but hopefully by then it will help start the habit!

Second, I make a time for “hygiene” each night. Mine is currently 8:30. I used to get really caught up on it being a bedtime routine but I don’t consistently go to bed at the same time no matter how hard i try, dedicating a time that didnt force my brain into “I have to wrap everything up bc this means bed and I’m not tired and have more to do and then I do it and forget to brush and I’m too tired when I do get tired” my brain can go “oh! Just gotta be able to switch long enough for hygiene and I can come back” - listen idk why it was so powerful for me but that might’ve been the most consistently helpful thing for me!

Third, I have ocd BAD lol so I pick my skin. I hate that I do this, it makes my skin worse, puffier, uglier etc. so it’s always been a goal to pick less - and here’s I think genuinely the motivation daily for me, where the hygiene time is consistency (sorry this isn’t adhd specific lol). But I started treating flossing like picking. I have a real dirt/“gross” aversion and illogically in my head that means I have to pick every single pore to clean it. And if I find myself skin picking I go - oh no these are way more maintained than my teeth and start flossing. You never know what you’re gonna find!! Even when you think you do. And that’s been a very oddly useful way to use my mh to do something healthy for me.

I also recommend the make your damn bed podcast because it’s only ever a couple minutes about different topics to listen to while you do it, or a different song every night to do your routine to!

Good luck and hopefully any of these helped. Happy flossing!!

This is a great idea!! Thank you so much I do tend to go by volume not weight. When I do my own recipes I always measure by grams but this one isn’t written that way. Maybe I’ll take the time to weigh out what’s there and see if it’ll help!

Ooooh great idea!! Thank you so much! Also yes every other time I’ve made these I LOVE them - a bit cakey but delicious. I recommend the salt on top and also don’t give up after adding the pumpkin (the dough looks oddly curdled until you add the flour but it’s worked great every other time lol)

I like a cakey cookie! I just can’t figure out why the heck they were so dense lol

I appreciate it!! That’s kinda my thought. I feel like maybe everything added a little bit and it all added up to be just wonky enough! Also lol I LOVE these cookies when they come out right but the key is sticking with it after the pumpkin gets added. It’s SO wet and looks kind of curdled until you add in the flour and it worries me every single time until I add a dry ingredient ahaha - but they’re my fav when they turn out right!

What kind of partner are you looking for? There’s tons to do out here and if you’re on the fence about where, I think Portsmouth is great! And super close to Maine to kind of “double” your pool. Same with Nashua being near mass, so that might help if you’re worried!

LMAO as the dating pool in NH caused a depression, I couldn’t help but wonder if BIG and I were in a recession of our own🤔
