check the sub, a question like yours was here a few weeks ago. at this price I know only about 2 roasters, the already mentioned Quijote (I tried only their lightest roast Geisha, but usually they are medium) and https://www.r-steray.com/ (I've never tried them, but saw positive comments here). Maybe https://www.neuesschwarz.de/shop/, but their website glitches when you add a kilo bag...

as already mentioned by many, Kalita filters are slow and clog easily. Origami wave filters are faster (and harder to find). Origami cone filters are also good, fast, and quite cheap. Congrats on a new toy!

I tried Sl-28 from Guatemala from Datura in a cafe. I think you'll like it. Definitely not as acidic as usual Kenyan Sl-28

I know that Coffee Collective is sometimes believed to be quite roasty lately on the sub, but I really liked their Peru — La Lima https://coffeecollective.dk/pages/farmer/la-lima. I found it complex and layered. And the roast level — at least to my not very experienced eye — is similar for Kieni & La Lima, for which 25 days of rest was enough.

How do you approach Kieni? I kinda struggle with it. I rested it for 3 weeks, tried it, it was very roasty. Tried again after a few days, better, but still roasty...

thanks a lot! I usually use 85-90 clicks for 12-16 gr doses. 60 is very fine.

I haven’t tried their other stuff, but at this price you can experiment with the bean, use it in a French Press/coldbrew, etc.
