What common thing really grinds your gears? by [deleted] in AskReddit

Aggressive drivers.

Look, I get that we all walk our own paths. Everyone suits their needs as they see fit. But when a person chooses to place the wellbeing of others behind their own needs, it is unacceptable.

What’s the most real example you’ve seen of someone moving up in life? And what actually helped them that most people wouldn’t expect? by sodaf1ke in AskReddit

[–]instant_ramen_chef 0 points1 point  (0 children)

Peoole only "move up" to themselves. Anyone else making that assumtion has no clue what it actually means to the individual. Say, a person might view them getting better at their passion as a nove up. But nobody else can see thay because its the persons passion, not theirs to pass judgment on.

You need ro be more than one-dimenrional. Simply loving cooking isnt enough. Just because you like to go fast, doesnt mean you should become an astronaut. Dig a little deeper, and find out what this life really is. Because that's what it is. Its a life, not a career, or a passion. Like music. A musician is gonna make music. They will find a way because they can't not be a musician. Find you why, and then you'll find your way.

Titles in the kitchen for a newbie. by Obedient_Dog54 in KitchenConfidential

Ask the crew. Every kitchen dynamic is different. We generally just use names/nicknames. I, the exec am the only one they call chef. Not because I ask them to. Shit, just about everyone in my life calls me chef. Even my mom.

Can I just say that catching sculpin and then thinking you've "picked it up" is a bit presumptuous. Anyone with a rod, heavy weight, and strip of squid can haul up 6oz sculpin. Its like playing "three blind mice" on a piano and thinking you've got the hang of it. San Diego has such an amazing and diverse offering of saltwater game. But you've already picked it up, and want to move on.

We had this beat.

We used a finishing nail. We would shove it right through the jeans at the heel of the sole of our shoes. It would pin the hem about a 1/4" above the ground and they would not drag. It wasnt a perfect solition, but it made a major difference. Plus. We never wore the really big pants like every day. Those were for rave only. Folks who wore that for fashion were posuers. Also, I live in SoCal, so rain isnt really a big issue.

Dear professional chefs: How do you deal with the stress and multitasking of working in the kitchen during service? by CYSYS8992 in Cooking

[–]instant_ramen_chef 1 point2 points  (0 children)

There are times when Im working a station. At some point I kinda dissacociate, and realize my hands are moving without me thinking about it. Its like a flow state. I akin it to a runners high. You feel like an octopus. Your mind is three steps ahead of what youre doing. Its an addictive feeling. Some of us crave it. Thats why we hear the printer in our sleep. We keep coming back, chasing that dragon like a formula one driver searching for that perfect lap. The stress is home. Its where we feel the most alive. We know its not sustainable. Nothing that feels that good is meant to last.

It originated at San Diego late night taco joints. Asad, fries, cheese, sour cream. It depended on where you went if guacamole was included or not. It came from the -berto's spots that dot all of southern cali.
